L’avancée de la consommation gourmet au Brésil : notes ethnographiques sur le cas des cafés de spécialité
Abstract
Based on an ethnography carried out in Brasilia and São Paulo, this article traces the ways in which coffee has changed as it enters the niche market, when it comes to be appreciated for new reasons, especially the art of sensory tasting. In total, seventeen coffee shops were investigated and questionnaires were completed by twenty-nine baristas. The result allowed us to create cartography of the circulation of flavors and skills in the consumer spaces of coffee.
