Abstract

A review : soybean lipoxygenases. In this review, the authors take stock of the current knowledge in the arec of soybean lipoxygenases. They focus on the comprehension of reactional mechanisms (substrates, inhibitors, active site, etc.). Physiological functions and uses of the enzyme in the food industry and in biotechnology are also considered.
