This study aimed to compare the physical and chemical characteristics of whole rice, broken rice, and soybean hydrosoluble extracts. The analyses (in triplicate) were pH, soluble solids content, moisture, ashes, proteins, lipids, total carbohydrates, calcium, magnesium, cupper, manganese, iron, zinc, and caloric value.
