This article analyses the geography of Michelin-starred restaurants in France as it appears in the Michelin Guide 2021. It compares this geography with the geography of restaurants in general, but also with the characteristics of the geography of France (regional differences, urban-rural complementarity, tourism dynamics, territorial accessibility, etc.). The aim is also to compare the current geography of Michelin-starred restaurants with the existing literature on the subject: the urban heritage of location and the slow and uneven spatial spread, as well as explanatory factors, such as an increased mobility and the development of gourmet tourism.
