The application of natural colorants such as anthocyanins is growing exponentially in an attempt to satisfy the consumer demand for both perceptions and health benefits. However, there are some practical challenges related to the color and bioactivity losses of anthocyanins due to their poor stability during food processing, storage, and digestion in gastrointestinal tract. Biopolyelectrolyte complexes (bioPECs) are one of the most attractive delivery carriers to overcome the limitation of anthocyanins. This article provides a comprehensive overview of recent studies (2015–2021) of the utilization of bioPECs to encapsulate, stabilize, and release anthocyanins for the functional food applications. The focus is directed toward the production strategies of bioPECs, the preparation conditions, the influencing factors, and the possible stabilization mechanisms. We also highlight the trend of integrating biopolyelectrolyte complexation and other stabilizing methods including copigmentation, gelation, and layer-by-layer deposition. Finally, future directions and challenges of bioPECs for the delivery of anthocyanins are given.
