A significant factor in the protection of consumer health is the systematic and constant implementation of control for the presence of residue of biologically active substances and their metabolites in raw materials and in primary products of animal origin. As regards meat, an essential aspect of security is definitely the control of possible residue of veterinary medicines and environmental contaminants. In that respect, the objective of the national project entitled „Development of technology for drying and fermentation of the sausage petrovačka kobasica (Petrovská klobása - registered geographic origin) under controlled conditions“, Number TR - 20037, was to protect the product petrovačka kobasica (Petrovská klobása) with the appropriate appellation. A part of the compulsory investigations also included the establishing of the presence of residue of veterinary medicines and environmental contaminants in raw materials and in the finished product, which was also the aim of this work.
