Effect of the addition of goji berries on the physical properties of gluten-free bread
Abstract
The aim of the work was to determine changes in physical properties of gluten-free bread caused by the addition of dried goji berries in the amount of 3, 6, 9, 12 and 15%. The control baking of gluten-free bread was made on the basis of rice and maize flour (50:50%). For control bread and bread with variable share of dried and ground goji berries, physical characteristics such as volume were measured, pH value and crumb colour parameters (L*a*b*), as well as features of its texture (hardness, elasticity, cohesion and chewiness) (TPA test – texture profile analysis). It was observed that along with the increase in the amount of goji berries in the studied range, the pH-value of bread decreased. In the range of 3 to 12% there were no significant changes in bread volume, only the 15% addition of this raw material caused a reduction in volume. The addition of goji berries contributed to a reduction of lightness and increase of redness of bread crumb. With the addition of berries in the studied range from 3 to 15%, the hardness of the crumb of bread decreased and elasticity increased significantly. With the increase in the share of goji berries from 3 to 6%, the cohesion of the crumb showed a growing trend. To sum up, the addition of goji berries had a positive effect on the physical and sensory properties, including the taste and aroma of bread.
