Influence of Drying on the Physicochemical Characteristics of Safou Pulp Oil. In order to contribute to the valorization of nonconventional oils seeds, safou fruits from the Makenene locality were collected and transported to the laboratory. There they underwent a drying at 50 °C to different water levels in an electrical over. The influence of the final water content on the extraction yield and the physico-chemical characteristics of oil extracted from the pulp of the safou fruits were evaluated. Through variance analysis, this study reveals that the drying treatment significantly influences oil extraction yield. The best drying which produces maximal extraction yield and which gives the best ratio of the quantity of oil extracted to energy consumption, stands at 6.17%. Likewise, the acid and peroxide values are significantly influenced by the thermic treatment. At the final water content of 6.17%, these values stand at 4.21 and 7.33 respectively. Correlation tests show that the negative correlation between the iodine value and the final water content is significant only from water contents below 31.46%. At the final water content of 6.17%, the iodine value is 54.18.
