The quality and safety assurance of food is a multilateral process. It is conditioned by the multiple risks of microbiological, physical, chemical origin, as well as of weak legal and methodological support, imperfect management, skill defi ciencies, inadequate agricultural practices, etc. The quality and safety of food must rely on the efforts of all those involved in the chain complex: agricultural production, industrial processing, transportation, storage, marketing and consumption. Maintaining safety and quality throughout the chain is a complex of measures, which requires advanced technologies, perfect legal and methodical support, trained personnel, monitoring processes to ensure the integrity of the food, as well as carrying out all the technological operations in good condition. Such opportunities provides the implementation of the Community acquis of the EU in the fi eld of food safety.
