Assumptions for Including Organic Food in the Gastronomic Offering of Istrian Agritourism
Abstract
The authors of this research analyze assumptions to including organic food in the gastronomic offering of Istrians agritourism. They assume that gastronomic offering of Istrian agritourism that includes organic food would be more acceptable and competitive on the tourist market. The authors analyzed their assumptions using surveys conducted in 2007 and 2008 on tourists in Istra to learn whether they prefer organic food, does organic food match modern tourist trends, and are they willing to pay more for it.
