Anthocyanins, natural pigment molecules found in plants, show potential as green reagents for solid-state colorimetric analytical sensors, aligning with the urgent need for environmentally friendly analytical techniques. This review focuses on anthocyanins' diverse role in solid-state colorimetric sensors utilized in food quality control, environmental monitoring, and medical diagnosis. Anthocyanins provide prospects for enhanced analysis and sustainability across a wide range of applications by eliminating toxic reagents and reducing hazardous waste. However, achieving stable anthocyanin integration into sensor technology necessitates collaborative research to fully understand their molecular complexities. Furthermore, assessing the environmental impact of developed methods is critical for moving research forward in line with sustainability objectives.
