Structural properties of dehydrated films of protein solution
Abstract
The formation of various characteristic dissipative structures in the films of aqueous and aqueous-salt solutions of albumin protein in dehydration processes is considered. It is shown that a number of experimental parameters affect the shape and spatial distribution of two-dimensional structural formations in films. A conclusion is drawn on the importance of the structural self-organization of films in the process of their dehydration.
