Haematochimic parameters are studied to understand and explain animal physiology, particularly connect with nutrition. Few detailed information on metabolites concentrations in beef cattle, particularly in hypertrophied animals, have been reported (Istasse et al., 1990; Lazzaroni et al., 1995, 1998). It was found that levels of some serum metabolites are different in animals with and without muscular hypertrophy, so as in relation to breeds and feeding levels, in young bulls between 6 and 16 months of age (Lazzaroni et al., 1995, 1998), and that the metabolites and hormones concentrations depend primarily, besides on age, on changes in nutrient supply (Beeby et al., 1988)...
