The acid hydrolysis process of coffe pulp wastes from the Municipio Escuque, Trujillo was studied in this work. The hydrolized pulp has proper sugar concentrations (xylose, arabinose, fructose, glucose and total sugars), which make it into an useful substratum for producing metabolites (alcohols, acids, aldehydes, ketones, etc.) by fermentative processes, and for producing biomass (single-cell protein) via aerobic bioprocesses. A variance analysis was done using the General Linear Model of the Statistical Analysis System (S.A.S.). Sulphuric acid concentrations, the period of time spent in the hydrolisis process and the interaction between both aspects were highly significant (P < 0.01) for the sugar content. Time only influences against xilose and arabinose sugars, the sulphuric acid concentration influences in proportion to the content of every variable, excepting fructose, with 240 min and 1.5% acid as the best conditions. The best results of the hydrolized pulp were: arabinose and glucose with 56.64 Ó 33.42 and 37.68 Ó 15.85g/ kg dry pulp, respectively. Total sugars obtained are 128.64 Ó 48.69 g/kg dry pulp.
