Colorimetric Determination of Basic and Additional Color of Apple Fruit Skin in Clones Gala Galaxy and Gala Mast
Abstract
Picking and correct storage of fruit are final procedures in fruit production. It is not enough only to produce fruit, you also need to pick, storage and offer that same fruit to the market in good condition. These final procedures have influence on price and profitability in fruit production. Picking should be done in the prime stage of maturity, when fruit have the appropriate chemical composition and also when the fruit is in condition for longer storage. There is the connection between the change of color of fruit skin and disorders in biochemical and physiological process, during the storage time of apple fruits. In such way, increased intensity of fruit respiration is always followed by more intense degradation of chlorophyll and in change of basic and additional color of fruit skin. Finally, the end goal of intensive fruit production is successful placing on the market and acquisition of profits. The color of the fruit skin is very important characteristic which has a great influence on customers during their choosing of fruit. Therefore, fruit should be picked in the stage of optimal development of basic and additional skin color. In this paper, we observed change of basic and additional color of apple fruit skin in case of two clones type gala -galaxy and mast, in their final maturation period, during the storage in NA storage chamber and after the storage.
