Aim of the study is to investigate resource-saving methods used for full or partial detoxication of grain from mycotoxins in accordance with biomedical requirements and sanitary standards of the Russian Federation and requirements of exporting countries. Rates of safety od the investigated grain (wheat, barley and corn) are an object of the research. Mold fungi and mycotoxins produced by them in exported grain are a subject of the research. The analysis of the mycotoxin content in grain from the South of Russia is conducted and the most frequent scopes of mold fungi formation on grain are found out. Physical methods of detoxication grain, infected with mycotoxins, are introduced. Ways of further realization of grain on a food market are stated. Scope of work is represented with 7 pages of main text and illustrated with 5 figures and 7 tables. References contain 56 sources including All-Union State Standards and scientific papers by domestic and foreign authors.
