Introduction: the educational teaching process of the Stomatology career in the 2019-2020 and 2020-2021 academic years was affected by the presence of SARS-CoV-2 and the biosecurity measures taken to prevent infection. Aim: To describe the influence of the COVID-19 pandemic on the performance of the minimum skills of fifth-year students of Stomatology. Methods: a cross-sectional descriptive observational study was carried out with fifth-year Stomatology students. The academic years 2016-17 to 2020-21 and the months from November to the first half of March of each period were included. The population studied was 32 students. Results: concerning the preparation of individual medical records in the 2016-17 and 2018-19 academic years, 83.5% were completed, while in the 2019-20 and 2020-21 academic years, only 36.8% were completed. Cavity preparation overall increased from 76.8 % in the years 2016-17 and 2018-19 to 83.8 % in the years 2019-20 and 2020-21, not at the expense of permanent restorations but of preparations for emergency temporary sealings or definitive restorations. Conclusions: there is a decrease in the number of minimum skills developed by students in the 2019-2020 and 2020-2021 academic years compared to the 2016-2017 and 2018-2019 period. Progress is made in the organization of the training process, in the quality of the teaching-learning process and in the use of the time and material resources available.
