Ahuyama production in the Department of Cauca has declined over the past 3 years and technological demands not served to resolve the situation are. Two planting systems (traditional system and improved system) of ahuyama variety Bolo Verde in Guachené (Cauca) were compared and found to be harvested at 60 days after flowering, by physical assessment and chemical variables such as weight diameter (axial and radial) thickness of the pulp, which showed an increase between 30 and 60 days after flowering and kept these properties from day 60 to day 90, with an average pH of 6,8, firmness between 72,22 and 44.15 N; color changes during maturation are presented initially pale green hue reaching yellow and orange shades; quantification of total soluble solids indication increase thereof as well as the thickness of the pulp and a value sphericity> 1 for most ahuyamas, possibly with the culture system is not significant for the response variables but the harvest day after flowering it is.
