The physical and chemical characteristics of mulberry fruits varied according to cultivar. Cultivar Korin stood out because showed higher soluble solids content and higher acidity, important requirements for better tasting fruit. When considering the volume for processing, the cultivars IZ 1/3, IZ 1/12 and IZ 15/1 had a higher mass.
