Mass-moisture exchange characteristics of carrots
Abstract
Some thermodynamic characteristics of carrots were calculated and analyzed based on known experimental data - the binding energy of water with the material and the specific isothermal moisture capacity. An innovative nomogram is presented, which can be successfully used for easy and quick determination of the binding energy of water. An empirical equation (third degree polynomial) for the specific isothermal moisture capacity is derived. All results in the paper will be used to design dryers and drying processes for this product.
