The management of a merchant company required well-trained and competent staff. For this reason, merchants placed great importance on the training and recruitment of their employees, favouring family ties and geographical origin. The content of the training as well as the permanent control over the actions of the employees guaranteed the smooth running of the economic activities. Through the case studies of two Tuscan companies specialised in large-scale trade, Datini and Salviati, our article highlights the processes of professionalisation of merchants as they appear in accounting documentation and correspondence
