EFFECT OF ELECTRICAL. STIMULATION ON NON-PROTEIN-NITROGEN (NPN) CONTENT OF BEEF
Abstract
The effect of electrical stimulation on changes in NPN content of beef stored at ambient and refrigeration temperatures was studied. The NPN content increased both in C and ES samples on storage probably due to the enhanced proteolysis. NPN values were higher for ES samples at every point of observation compared to the corresponding C samples
