Des toques dans les rues : les food trucks de São Paulo et la stratification symbolique de la ville

Abstract

Food trucks have been circulating in São Paulo since 2013 and their owners demand to sell updated and « differentiated » versions of that traditional street foods that can be found in the city. This article will explore that in addition to taking their products to specific zones of the city, promoting and emphasizing its symbolic stratification, food trucks also bring to the streets one of the symbols of excellence that, until them, was only found inside restaurants: their chefs and their links with the field of gastronomy.
