PENDAMPINGAN USAHA PRODUK MAKANAN BEKU BERBAHAN DAGING AYAM DI KELURAHAN OESAPA KUPANG NTT DI MASA PANDEMI COVID-19

Masa pandemi covid-19 membuat ruang gerak masyarakat terbatas untuk membeli makanan di warung atau di pasar, sehingga produk pangan beku berbahan daging ayam dapat menjadi pilihan, karena praktis, dapat disimpan lama dan bergizi. Namun, permasalahan dari kelompok mitra yaitu: 1) minimnya pengetahuan untuk membuat berbagai variasi produk makanan beku berbahan daging ayam, 2) kurangnya permodalan untuk melakukan usaha kuliner berbahan daging ayam, 3) kurangnya motivasi untuk menjual produk beku berbahan daging ayam. Metode 1) Memberikan bantuan karkas ayam dan paket bantuan alat dan bahan pengolah produk daging ayam, 2) memberikan penyuluhan 3) melakukan pendampingan kegiatan kepada ibu-ibu, dan melakukan evaluasi setiap kegiatan agar ibu-ibu dapat mandiri dan usaha berkelanjutan. Simpulan: 1) Bantuan modal berupa karkas ayam dan peralatan dapat membantu ibu-ibu untuk memproduksi frozen food, 2) Pelatihan wirausaha tentang keuntungan usaha penjualan produk beku berbahan daging ayam, 3) Penyuluhan tentang protein hewani dapat menyadarkan masyarakat untuk meningkatkan konsumsi daging ayam. Kata kunci : daging ayam, makanan beku, karkas, pandemi ABSTRACT During the COVID-19 pandemic, people have limited space to buy food in stalls or at the market, so frozen food products made from chicken meat can be an option, because they are practical, can be stored for a long time and are nutritious. However, the problems of the partner group are: 1) lack of knowledge to make various variations of frozen food products made from chicken meat, 2) lack of capital to conduct a culinary business made from chicken meat, 3) lack of motivation to sell frozen products made from chicken meat. Methods 1) Provide assistance with chicken carcasses and packages of tools and materials for processing chicken meat products, 2) provide counseling, 3) provide assistance for activities to partners, and evaluate each activity so that partners can be independent and have a sustainable business. Conclusions: 1) Capital assistance in the form of chicken carcasses and equipment can help partner to produce frozen food, 2) Entrepreneurship training on the benefits of selling frozen products made from chicken meat, 3) Counseling on animal protein can make people aware of increasing consumption of chicken meat.
