The ongoing changes in the world today, practically in all spheres of human life, are reflected in distinct changes of behaviours, hierarchy of values, the way of working, etc., resulting in changes in the way people live. One of the manifestations of different life style is change on such an important field as nutrition, and thus changes in consumer behaviours and eating habits, caused, among others by increasing awareness of nutrition. The paper presents the concept of nutritional awareness and dietary behaviour of consumers and the elements essential for proper evaluation and formulation of these factors. The specified items can be the basis for building knowledge test, which will expand the application range of information about knowledge of the principles of proper nutrition in Poland and their use in nutritional practice of Poles.
