Cuisine régionale, identité et gastronomie dans le Minas Gerais
Abstract
This article aims at analyzing the social construction of the Minas Gerais cuisine, as part of Brazilian national project, highlighting the role of intellectuals, writers and artists in the shaping of this regional identity. It also seeks to reflect on how the relationships between territory and population, as well as the composition of emblematic dishes have now been re-signified by increasing tourist flow. The growth of Gastronomy Festivals in the cities of Minas Gerais is illustrated by the case of Tiradentes, where this event has been promoting the confluence of food traditions and culinary innovations, defining a new sense of place.
