Relationship between pre-slaughter handling and carcass bruising in calves
Abstract
A bruise is a tissue injury with rupture of the vascular supply and accumulation of blood and serum in tissues (Hoffman et al., 1998). Bruises can occur during each pre-slaughter operation including loading at the farm, transportation, and unloading and resting at the abattoir.
