Optimization of the extraction conditions of pectin from mango peel using response surface methodology

Time and temperature variables were optimized extracting pectin from creole mango peel (Mangifera indica L.) using Response Surface Methodology (RSM). Pectin was extracted applying the method of acid hydrolysis using acetic acid and alcohol precipitation. The process was adjusted to a second order model, where an encoded value was obtained for each factor and the critical value characterized as a maximum of 96.84 °C and 103.93 minutes; a predicted value for a fixed point of 19.03% for yield variable in the optimum area. The second order model found using the RSM, allows to increase the yield and quality of pectin, which contributes to cost reduction, use of ower quantity of reagents and to estimate actual yield that could be obtain industrially in the production of pectin.
