The diet of the Manchego nobleman is articulated around a folkloric calendar, with the opposition between Lent and Carnestolenda, and religious, with the cycle of the Passion through Good Friday, Saturday and Easter Sunday. Beyond the tensions between old and new Christians, the conflict between “tocinófilos” and “tocinófobos”, there is in Cervantes’ work meals for all palates, for those who celebrate Friday (Moriscos), Saturday (Conversos) and Sunday (Christians). After all, we have a typical Mediterranean diet that has its roots in the medieval Spain of the three religions.
