The article presents an overview of modern literature data concerning the development of specialized products for the prevention of toxic poisoning of the organism by foreign compounds, including salts of heavy metals. Particular attention is paid to the creation of sour-milk products for the prevention of toxic poisoning, identified the main food ingredients that enhance the detoxifying properties of specialized foods.
