With the deregulation of the coffee there was the need to discuss availability, export and consumption of the product through a perspective encompassing all links in the industrial chain of coffee. The process of commercialization of coffee led to further deepening of the interdependence of the segments of the export industry and the productive sectors. In this sense, it was aimed to analyze the industrial chain of Brazilian coffee after deregulation and its adjustments to meet market demands. Data and information were obtained on the Internet and works precursors. The results showed that the coffee remains one of the most important Brazilian agribusiness. With deregulation, there was instability in prices and adjustments in both prices and the imperfections of the actors in the chain occurred slowly. On the other hand, the market dynamics printed right across the industrial chain of coffee. We have created new niche markets, with emphasis on product differentiation, quality, certification, social responsibility, least harmful to the environment. There was a migration of production to regions with better climatic conditions, Minas Gerais and Espírito Santo. Segment marketing, there has been more emphasis on the formulation of blends aligned to the process of product differentiation to meet the industries and importers.
