CONSTRUCTION OF FOODSTUFFS FOR SPORTSMENS-PLAYERS
Abstract
The article describes the basic techniques of food technologyfor sportsmen of game sports that experience extremely high levels of physical activity, which invariably entails a large expenditure of physical and emotional forces. An important component of the success of the game teams is a well-designed diet of athletes. In the paper, studies on the evaluation of balanced consumption ofprotein-carbohydrate food components by athletes-players are described. The conducted experimental researches allowed to establish a sufficient level of macronutrients content in the developed food products as a component of their biological value. The role of natural products containing valuable macro- and micronutrients is shown in the rational nutrition of athletes. The choice of sportsmen in favor ofproducts of animal origin is justified.
