The scientific production on the human alimentary consumption has the main slope in the medical and nutritional field. In a minor extent, there are socioeconomic investigations. The objective is to characterize the relevant research from the stated above area, highlighting the factors that influence the choice of consumption. The method used is a systematic analysis between 2008 and 2018, in databases of SCOPUS, REDALYC, DIALNET and SCIELO. A literature review was carried out using a systematic approach using four phases: search, evaluation, analysis and synthesis. The results show that socioeconomic studies approach the analysis from extrinsic factors: income level and prices. On the other hand, social factors are referred to as intrinsic: the flavor and the cultural environment of the individuals.
