Beverages development project with whey: a method with a new PCP approach
Abstract
The purpose of this article is to plan the production of beverages from whey available in the region Southern Coast of Bahia, through a structured method that incorporates a new approach to Planning and Production Control - PPC when considering forecasting demand techniques and computer simulation. It was possible to define the target audience for the distribution of beverages, as well as the entire scope for the production of the product, with the determination of the model parameters, process flow diagram, equipment, necessary staff, production strategies, balancing and validation of a great scenario for production. This article serves, therefore, as a sizing production proposal stage within the chain of whey recovery supplies and has positive results, when the proposed solutions are deployed, in the generation of employment and income and the reduction of pollution caused by the poor performance of this co-product by producers of cheese.
