The objective of this work was to analyze the extracellular inulinase production by the fungus Purpureocillium lilacinum in modified Mathur’s medium supplemented with different carbohydrates and commercial inulin as a carbon source, at different pH's and nitrogen sources, determining the reducing sugars of the hydrolysate by the Nelson method modified by Somogy, using as substrate commercial inulin at 1.0% (w/v) in 50 mM acetate buffer pH= 5.0. In addition, some biochemical characteristics were analyzed, such as stability at 4oC and 28oC, optimum pH and temperature, the effect of protein and substrate concentration, the best inducers being chicory inulin (EA 14.8), glucose (EA 5.2) and polygalacturonic acid, at 7 days of incubation and glutamic acid as a nitrogen source, at pH of 4.0. In addition, the enzymatic activity was very stable at 4oC, pH 5.5, and 6 hours of incubation.
