Effect of castration age on carcass traits and meat quality of Simmental bulls

Abstract

Italian beef management is usually based on entire males, since they show better growth rate and higher lean yield carcasses. Despite consumer’s preferences require lean meat, producers have been induced to consider the positive effect of castration especially on meat organoleptic traits.
