UPAYA PEMENUHAN PANGAN YANG BERGIZI SECARA MANDIRI DI MASA PANDEMI COVID-19

Pandemi Covid-19 yang sudah berlangsung sejak bulan Maret 2020 berpengaruh kepada kemampuan rumahtangga untuk memenuhi pangan keluarga. Ibu rumahtangga yang memiliki peran sangat potensial dalam keluarga menjadi khalayak yang strategis bagi kegiatan pengenalterapan ilmu pengetahuan dan keterampilan upaya pemenuhan pangan secara mandiri. Kegiatan dilakukan dengan metode penyuluhan, demonstrasi dan belajar sambil mengerjakan (praktek). Pengetahuan dan keterampilan yang dikenalkan adalah menanam sayur-sayuran bayam dan kangkung dalam keranjang buah bekas, membuat tauge dan membat telur asin. Peserta kegiatan terdiri dari 13 ibu yang rumahtangganya terdampak pandemi Covid-19 terutama dalam hal penurunan kemampuan ekonomi. Para peserta mengikuti kegiatan dengan antusias dan mempraktekkan pengetahuan dan keterampilan yang diperoleh di rumah masing-masing. Sebagian besar peserta kegiatan menyatakan bahwa bertanam sayuran dalam keranjang bekas, membuat tauge dan membuat telur asin memberikan keuntungan ekonomi, tidak bertentangan dengan situasi kondisi sosial, budaya dan lingkungan, mudah dilakukan, bisa dicoba sendiri dan hasilnya dapat diamati. Semangat peserta kegiatan harus terus dipertahankan. Pengetahuan dan keterampilan yang diperoleh harus terus diterapkan sehingga dapat menyediakan sumber pangan secara mandiri. Pengetahuan dan keterampilan sederhana yang lain juga dapat dikenalkan agar membangkitkan kreatifitas, produktifitas dan kemandirian terutama bagi ibu-ibu rumahtangga. Kata kunci: upaya pemenuhan pangan, pangan keluarga, pangan bergizi, mandiri, pandemi Covid-19 ABSTRACT The Covid-19 pandemic, which has been going on since March 2020, affects the ability of households to meet family food. Housewives who have a very potent role in the family become strategic audiences for the application of knowledge and skills to fulfill food independently. Activities carried out by extension methods, demonstrations and learning by doing (practice). The knowledge and skills transferred were growing spinach and kale in fruit baskets, making bean sprouts, and making salted eggs. Participants in the activity were 13 housewives whose households were affected by the Covid-19 pandemic, especially in terms of decreasing economic capacity. Participants participated in the activity enthusiastically and practiced the knowledge and skills acquired in their own homes. Most of the participants stated that growing vegetables in baskets, making bean sprouts, and salted eggs provide economic benefits, compatible with social, cultural, and environmental situations, was easy to apply, could be tried by themself and the results could be observed. The enthusiasm of the participants in the activity must be maintained. The other knowledge and skills have to be applied continuously so that they can provide food sources independently. Knowledge and other simple skills can also be applied to generate creativity, productivity, and independence, especially for housewives.
