Comparison of the specifications of the porcine production channels under “sign of quality” in Walloon Region. The porcine production in the Walloon Region presents a profile less intensive than in the important close production areas. Various production channels “under sign of quality” coexist there, aiming at more or less broad types of consumers. For more clearness, it seemed convenient to operate a comparison of the various specifications governing the processes. After a review of the current legislation, the principal criteria of differentiation are analysed. Three tendencies emerge from that analysis: industrial quality, qualities with a particular concern (such as the development of a race, the traditional production, etc.) and biological quality as defined by the European Union.
