In view of the problems of low yield of enzymatic conversion of ginsenoside Rb1 in traditional buffer solution, low solubility of intermediates and slow enzymatic conversion rate, ginsenoside Rb1 was converted by deep eutectic solvent auxiliary enzymatic method. The effects of DES types and mass concentration, pH value, temperature, enzyme-substrate mass ratio and reaction time on CK yield were investigated, and the optimal conditions for the conversion reaction were obtained in DES buffer with pH=5.3, the mass ratio of snail enzyme to substrate was 1∶1, and the yield of CK could reach 87.92% at 50 ℃ and the reaction for 36 h. The method of dissolving ginsenosides in DES solvent for enzymatic conversion was adopted, which can better increase the solubility of ginsenosides, enhance the secondary structure of enzymes, and improve the yield of CK, the preparation process is environmentally friendly, safe and suitable for industrial production.
