EFFECT OF ELECTRICAL STIMULATION ON TENDERNESS OF BEEF
Abstract
The present study was undertaken to study the effect of electrical stimulation on tenderness of beef stored at ambient and refrigeration temperatures at different intervals. Significant improvement in tenderness scores was obtained at 8 h of storage at ambient and refrigeration temperature and at 24 h 5f storage wider refrigeration temperature for electrically stimulated samples.
