Eco-Cultural Trends in Dining Outlets of Ukraine
Abstract
The aim of this paper is to identify the special aspects of modern restaurant enterprises in the context of the development of environmental entrepreneurship in Ukraine. Research methodology of the study is based on a set of fundamental principles of the theory of social ecology, the principles of a systemic, socio-ecological and cultural approach to the study of ecological culture. Taking into account the interdisciplinary nature of this issue, in the process of research and analysis of restaurant activities in the context of environmental entrepreneurship, integrated, value, structural and functional and factorial approaches were applied; methods of modeling, system analysis and generalization, which contributed to understanding the mechanisms for implementing the main principles of ecological culture in the field of restaurant industry. Results. The author studies the specific aspects and tendencies of the development of environmental entrepreneurship in Ukraine in the field of dining outlets. The author defines more precisely the concept of “eco-entrepreneurship” and the concept of domestic ecorestaurants in the context of the principles of ecological culture. It has been revealed that in the field of restaurant management in Ukraine, ecological entrepreneurship, according to an innovative approach based on a new type of ecoeconomic thinking (the main principle is to prevent environmental damage), involves replacing environmentally harmful products with safe ones and carrying out activities aimed at preventing, limiting or eliminating negative environmental consequences of economic activities (recycling of waste and the use of environmentally friendly materials technologies to minimize environmental pollution). Novelty. The author raises the issue of the environmental entrepreneurship, ecoculture, and ecorestaurants in Ukraine. The practical significance. The material of the study may be used in developing lectures by specialists in cultural studies.
