Identification of novel cancer chemopreventive peptides from bran residue of Riceberry cultivated in Northern Thailand

Rice bran residues are known as low economic-value and contain high protein nutritional value. This notion has caught interest of scientists to study the proteins and their hydrolysates from this bioresource. However, reports on the biological activities of rice bran residue proteins and their hydrolysates are still limited. Hench, this study aimed to fractionate 4 rice bran protein fractions including albumin (ABM), globulin (GBL), prolamin (PLM), and glutelin (GTL) from Riceberry and to investigate the chemical properties and bio-protective potentials of these proteins and their hydrolysates. Riceberry GTL presented the highest yield. Phenolic compounds including anthocyanin were higher in Riceberry bran proteins. Notably, GTL hydrolysate from the Riceberry showed the strongest antioxidant activity and the best antimutagenicity. Four promising dipeptides identified in the GTL hydrolysate were pGlu-Val, pGlu-Asp, pGlu-Asn, and pGlu-Glu. This study suggested that GTL hydrolysate from Riceberry bran proteins could be further developed as functional foods for chemoprevention.
