During the live transportation, shrimp can be affected by temperature, dissolved oxygen, high crowding, vibration and other environmental factors, triggering stress response, which will adversely affect the body function and muscle quality of shrimp. The inducing factors of transport stress and the changes of oxidative stress, endoplasmic reticulum stress and energy metabolism, immune system and muscle quality caused by environmental stress are introduced in this article. It also liste the countermeasures and suggestions about the live transportation of shrimp, which would certainly provide a theoretical reference for the transportation management of shrimp.
