Tomato-Free wonder sauce: A functional product with health-boosting properties

Sauces have gained immense popularity as an appetizer, owing to their surging demand in both local and international markets. Nowadays, people are searching for alternative recipes that do not include tomatoes. Instead, they are experimenting with new combinations of ingredients and innovative methods to process coated oils, giving rise to a unique sauce known as Innovative Sauce (IS). The primary objective of this new formulation is to improve its nutritional value, increase antioxidants, strengthen the immune system, and provide protection against certain diseases. According to the research findings, the IS sample exhibits significantly higher nutritional content compared to commercial ketchup (CKe). Specifically, the IS sample demonstrates elevated levels of carbohydrates, dietary fiber, and protein, measuring 34.23, 4.38, and 2.07 g per 100 g, respectively. These results suggest that IS has the potential to enhance immunity and might even have positive effects on cognitive abilities and brain health. Moreover, despite these changes in formulation, IS retains sensory properties similar to those of CKe, making it a promising new functional product.
