Acid sanitation of CKT by travelling grate system.

The modified sanitation procedure, which is based on addition of concentrated acid and fresh water only into a vessel with higher concentration of the acid, has been called sanitation with travelling grate by authors. Such a model enables partial renewal of solutions, and also move of organic impurities in the direction of concentration gradient, from the acid of higher concentration to that of lower concentration, and further to rinsing water. From the viewpoint of overall yearly cost on cleaning of cylindroconical fermentor tanks, it is possible to estimate the amount of 0,33 CZK per hectoliter of green beer. From the microbiological point of view, the model guarantees the standard as requirred for fermentor tanks filling with pitched wort.(In Czech, English summary only)
